Egg quality

Eggs in Canada are graded according to their quality:

  • Grade A: eggs that you buy at the grocery store with very few shell stains, cracks and a smooth uniform shape.
  • Grade B: eggs sold for commercial baking or processing. With a rough shell texture, flattened yolk or thin whites.
  • Grade C: eggs sold and used in processed egg products. With cracked or stained shells, flattened yolks or thin whites.

Grade A eggs have different classifications:

  • Jumbo: 70 g or more
  • Extra large: 63-69 g
  • Large: 56-62 g
  • Medium: 49-55 g
  • Small: 42-48 g
  • Peewee: under 42 g

Did You Know? All eggs sold in Canada are antibiotic and hormone free. Chickens in Canada are never given hormones.

Are white and brown eggs different?

Other than the colour of the shell, there is very little difference between white and brown eggs. The colour of the eggshell is determined by the breed of the laying hen. Generally white eggshells come from white feathered hens and brown eggshells come from brown feathered hens.
