How to Hard Boil an Egg

  1. place cold eggs in a single layer in a pan.
  2. fill the pan with water until the eggs are covered with 1 inch of water.
  3. bring the water to a boil over high heat. Once boiling, cover the pan and remove from heat source.
  4. Let the eggs stand in the hot water, covered for 20 minutes.
  5. After 20 minutes immediately drain water and run cold water over eggs until they are cool to the touch.
  6. Peel the eggs by cracking them all over on a hard surface and start peeling at the large end of the egg.

Did you know? To determine if an egg is hard cooked or raw try spinning it. A raw egg will wobble because it has a liquid centre and a hard boiled egg will spin smoothly.

How to Poach an Egg

  1. add 3-4 inches of water to a small cooking pot, bring to a simmer, but not a boil.
  2. crack an egg into a separate bowl.
  3. once water is simmering, use a slotted spoon to stir the water counter clockwise-creating a small vortex.
  4. remove the spoon and tip the egg out of the bowl and into the pot at the centre of the vortex.
  5. cook egg for 4 minutes.
  6. Use the slotted spoon to lift out the cooked egg and let it drain off water over a kitchen towel.

How to Fry an Egg

there are 4 basic styles of fried eggs:

  • Sunny side up: The egg is fried with the yolk up and is not flipped.
  • Over easy: The egg is flipped and the yolk is runny.
  • Over medium: The egg is flipped and the yolk is slightly runny.
  • Over well: The egg is flipped and the yolk is cooked hard.
  1. heat a non stick, oiled pan over medium heat.
  2. crack an egg into a bowl to prevent small piece of egg shell getting into the fried egg. Drop the egg into the pan and season with salt and pepper to taste.
  3. cook the egg until the white has set and the edges begin to curl, usually around 3-4 minutes. For sunny side up eggs-remove from pan and serve.
  4. use a spatula and flip the egg. Allow to cook for another minute for over easy, 2 minutes for medium and 3 minutes for over well.
  5. remove from pan and serve.
